when "sí" is used between the subject and the verb, it provides emphasis. So in this case the meaning may be closer to "I definitely can" or "I certainly can" than "Yes, I can." In other cases,"sí" seems to act the way we use "do" for emphasis.
Examples:
Sí, yo quiero leche. -> Yes, I want milk. Yo sí quiero leche. ~ (roughly) I do want milk.
Sí, yo puedo. -> Yes, I can. Yo sí puedo ~ I definitely can.
Sí, te quiero. -> Yes, I love you. Yo sí te quiero. ~ I do love you
